Spicy Bean Burger

A quick and easy burger packed with fibre and protein.

Serves 2-4

Prep: 10 minutes

Cook: 20 mins

Ingredients

1 can black beans, rinsed

1/2 a pepper, finely diced

small onion, finely diced

1 egg

1 tbsp garlic

1 tbsp ginger

1 tbsp harissa

1 tbsp cumin

1 tbsp dried parsley

50g breadcrumbs

salt and pepper

Method

Step 1

Preheat the oven to 200C/180C fan/Gas 6 and lightly oil a baking tray

Step 2

Pop the black beans in a food processer and pulse a few times

Step 3

Add all the other ingredients to the food processor and process until the mixture is sticky and starts to hold together, but the beans are not completely broken down.

Step 4

Divide the mixture into four portions and shape into burgers

Step 5

Place the burgers on the baking tray and bake for approximately 10 minutes on each side.

Step 6

Serve with a green salad
