Chocolate and Date Energy Balls

Packed with protein and fibre. Perfect for a quick snack on the go or your lunch box.

Ingredients

280g pitted dates

50g raw pecans

65g cashews

10g cocoa powder

½ tsp sea salt

30g almond butter

15 ml milk (any variety)

5 ml vanilla extract

Method

  • Line a baking tray with greaseproof paper.

  • Put the dates, pecans and cashews in a food processor fitted with a “s” blade and process until the mixture is fine

  • Add the rest of the ingredients to the food processor and process until the mixture just starts to clump together

  • Roll approximately 1 tablespoon portions of the dough into balls and pace them on the baking tray

  • Store the energy balls in an airtight container in the fridge until they chilled/hardened, or freeze.

  • Serve chilled or at room temperature
