Banana Mug Muffins

This is a perfect breakfast or snack recipe. The beans are full of fibre, so they will keep you full until lunch.

Serves 2

Ingredients

1 ripe banana

2 large eggs

3 medjool dates, pitted

40g cannellini beans, drained and rinsed

60g porridge oats

1 tsp vanilla

50g fresh berries, plus a few extra for topping

TOPPING

2 tbsp of plain yoghurt

2 tbsp of dedicated coconut (optional)

Method

Step 1

Add the eggs to a high-powered blender and blitz for 20 seconds, add all the other ingredients (except for the fresh berries) and blitz for a further 20 seconds or until the mixture is smooth.

Step 2

Divide the mixture into two clean, microwave-safe cups. Add a small handful of fresh berries to each cup and gently mix well before placing one mug in the centre of the microwave.

Step 3

Cook on high for 2 minutes, or until it is set on top (it will keep cooking a little as it cools). If cooking for two, repeat with the second mug, or store in the fridge for tomorrow.

Step 4

Top with some extra berries, coconut and a dollop of yoghurt.
